Salad with shrimp, mango, cherry tomatoes, green beans, orange vinaigrette

INGREDIENTS

For the shrimp salad

  • 16 large shrimp, peeled, leaving heads and tails on
  • 5 gr. orange zest
  • 100 gr. orange juice
  • 600 gr. mixed salad
  • 200 gr. mango, cut in thin slices
  • 160 gr. boiled green beans, cut into small pieces
  • 160 gr. cherry tomatoes, quartered
  • a little fresh mint
  • Salt

DIRECTIONS

For the shrimp salad

Marinate the shrimp in the orange juice and zest for 20 minutes. Season with salt and cook in a preheated oven at 180°C for 5-7 minutes. In a bowl, mix the salad with the mango, the green beans, the cherry tomatoes and the mint. Add the vinaigrette, season with salt and mix well. Serve with the shrimp.
