CAPER

The flower buds of the caper bush that is used to flavor or garnish foods. This small, firm bud has a pungent, slightly bitter flavor and is usually pickled in vinegar or packed in salt. The sourish, somewhat bitter flavor of capers adds an interesting touch to mayonnaise, salads and cold sauces such as remoulade. The combination of capers, olives and onion is characteristic of Mediterranean cuisine.
