A semisoft to hard cow's milk cheese that ranges in flavor from mild and nutty when young to sharp when aged. Gouda has a smooth yellow interior with small holes. It is shaped into a flattened round and is coated with a yellow or red wax rind. It is similar to Edam, except Gouda has a higher fat content, a slightly soften texture and a milder flavor.
