When cooking with fresh tomato, its skin and seeds are annoying in the mouth and difficult to digest.
For this reason it is best to remove them.
So, here we describe the process for how to peel and deseed tomatoes.
See it step by step, following the photo order.

Fill a pan with water and bring to the boil.
With a small knife, incise a small X on the underside of every tomato and remove the stalk.
Place the tomatoes in the boiling water for a few seconds.
Check by pulling the skin away from the X incision.
If it comes away easily, remove the tomatoes from the water.

Place tomatoes in water with ice so that they cool quickly and stop cooking.

Take tomatoes out of the iced water and remove skins.

Place tomatoes stalk-side down.
With a chef’s knife start cutting from the top of the tomato downwards, following the shape of the tomato.

Turn the tomato 180°, so as to cut the side opposite the one we have already cut.

Repeat the process with the other two sides.

We end up with 4 tomato fillets.

Remove the seeds.

Now we can chop the tomato flesh as required.
