Mix yolks with a little cream to create a uniform mixture.

Bring the liquid you wish to thicken to the boil.

Gradually add a little of the liquid to yolk mixture stirring, until the temperatures of the two even out.
We do this because egg is very sensitive to high temperatures and if you add it directly to the hot liquid it will break.

Add the yolk mixture to the liquid stirring with a wooden spoon over low heat until thickened.
Make sure the liquid does not boil.
