The general term of any of a variety of high seasoned sauces, uncooked or cooked, that are specially popular in Mexican and Tex-mex cooking. Salsas generally are chunky in texture and almost always contain chili peppers. They can be used as a dipping sauce for tortilla chips or spooned over main dishes. Although made of similar ingredients, picade sauce is usually smoother in texture and milder in flavor than salsa.
