An Italian cow'smilk cheese. Asiago piccante: after 8 to 24 months ripening time it is an extra – hard for grating. Asiago d’ allevo is a semi – hard cheese from Veneto with a fat content of least 34 % often more than 40% FDM. It is usually enjoyed at an age of 3 to 6 months.
