Chocolate: Why is there sometimes a grey layer on its surface?

The grey coating you sometimes find on chocolate means that at some point it was heated to the point that the cocoa butter it contains began to melt and was then cooled; as a result, the cocoa butter solidified on the surface.

Although not particularly attractive, this is not something which needs concerns you since it does not affect its flavor or its behavior during melting.
