To see how you can use gelatin sheets, follow the photos order.

Place gelatin sheets in cold water for a while until soft.
If you wish to execute this step well in advance of use, place the water and gelatin in the fridge so that the latter does not melt.

Squeeze the gelatin well to remove the water.

Melt the gelatin in a bain-marie

Alternatively, if gelatin is intended to be used in a warm liquid, add it into it, to melt, instead of using the bain-marie .
(This step replaces the previous one)

Stir the melted gelatin into the mixture you wish to thicken.
If it is liquid, it is a good idea to strain.
Cool in the fridge to set.
