Marinating: What is it?

Marinating is the application of a mixture of ingredients, called a marinade, to a food (mainly meat or fish) with the aim of enhancing or even altering its flavor and texture.

The enhancement of flavor is achieved when, for example, you season a cod fillet with salt and spices before frying it. If you covered it with salt for several days, this would alter its flavor.
