For the banana ice-cream
In a pot, heat the milk, cream and vanilla until just before boiling point. In a bowl, mix the egg, egg yolks and sugar and slowly add the cream mixture. Return mixture to pot and cook over low heat stirring with a spatula until it reaches 82°C. Remove from the heat, pour cream into the blender bowl together with the bananas and mix. Strain through a fine sieve, allow banana cream to cool and place in an ice-cream maker. Continue according to the manufacturer’s instructions.
For the strawberry – blackberry ice-cream
In a pot, heat the milk and cream until just before boiling point. In a bowl, mix the egg, egg yolks and sugar and slowly add the cream mixture. Return mixture to pot and cook over low heat stirring with a spatula until it reaches 82°C. Remove from the heat, pour cream into the blender bowl together with the fruit purees and mix. Strain through a fine sieve, allow mixture to cool and place in an ice-cream maker. Continue according to the manufacturer’s instructions.
For the chocolate ice-cream
In a pot, heat the milk and cream until just before boiling point. In a bowl, mix the egg, egg yolks and sugar and slowly add the cream mixture. Return mixture to pot and cook over low heat stirring with a spatula until it reaches 82°C. Remove from the heat, strain through a fine sieve and add chocolate. Stir lightly with a spatula until melted. Allow the chocolate mixture to cool and place in an ice-cream maker. Continue according to the manufacturer’s instructions.
