Slowly roasted tomatoes

INGREDIENTS

For the tomatoes

  • 2 kg. tomatoes cut into 1 cm. slices
  • 25 gr. olive oil
  • 10 gr. sugar
  • 10 gr. salt
  • 5 gr. garlic, finely chopped

DIRECTIONS

For the tomatoes

Layer tomatoes on a tin lined with greaseproof paper. Sprinkle the remaining ingredients evenly over the tomatoes and cook in a preheated oven at 120°C until reduced in size and loose most of their liquid. Allow to cool and chop finely. Store in the fridge.
