For the tagliatelle and finishing the dish

  • 500 gr. tagliatelle
  • 60 gr. olive oil
  • 350 gr. onion, minced
  • 80 gr. prosciutto, small dice
  • 400 gr. sautéed mushrooms
  • 120 gr. white wine
  • 800 gr. mushroom or chicken stock
  • 120 gr. cold butter
  • 120 gr. parmesan, grated
  • 10 gr. fresh thyme, finely chopped
  • 10 gr. chives, finely chopped
  • 10 gr. white truffle oil
  • salt

For the sautéed mushrooms

  • 500 gr. button mushrooms, quartered
  • 200 gr. sunflower oil
  • salt
