A shaped ball, cone or roll made from a mixture of ground or chopped meat, fish or poultry and vegetables. The mixture is held together by a thick white sauce or by a mixture of egg and bread crumps. Once shaped, croquettes are coated with bread crumps and deep-fat fried for a crisp, golden crust.
