A Japanese delicacy featuring vinegared cooked rice that is wrapped in fish (either raw, cooked, or smoked) or seaweed. Maki refers to sushi that is rolled in seaweed, often with thin shrips of vegetables and a layer of cooked egg in addition to the rice and fish. Nigiri is vinegared rice that is shaped by hand, rather than rolled, into small oval portions and wrapped or topped with fish or seafood.
