• Firstly, one must ensure the quality of the raw material, in this case, mince meat.
It is important to choose a mince meat with enough fat content, at least 20%, otherwise the meatballs or burgers will be quite dry. This is why a mixture of pork and beef mince meat is often preferable.
• The mixture must be moist enough
So moist as to stick lightly to the hands, but also pliable enough for shaping.
• After kneading the mixture it is a good idea to leave it in the fridge
It needs at least 1 hour, so that all the flavors are incorporated.
