When preparing homemade mayonnaise, you must take care to:

1. Always add the fat very slowly at the beginning.

2. Keep in mind the liquid to fat ratio. This sauce is an emulsion of fat in water which means that if we add more fat than the ration allows, the mayonnaise will break.

3. Not allow the sauce to warm or cool too much.
