There is an alternative way to cooking poached eggs which is slightly more time-consuming but offers perfect results and excellent appearance.
The basic difference is that you cook the egg covered in cling film.

Line the inside of a coffee cup or small bowl with cling film so that its edges extend beyond the top.
Daub the cling film with olive oil and break the egg in carefully.

Lift the cling film out of the cup or small bowl and twist to tighten.

Remove as much air as possible and tie the cling film in a knot close to the egg, creating something which looks like a pouch.

Place in a pan of water that is just below boiling point.

Leave it in the pan for a few minutes so that the egg is cooked to taste.

Take out of the water and cut the cling film to remove the egg.

Serve or chill to use later.
