The consistency and texture of vegetable puree is defined by:
• Correct cooking of the vegetable.
• Pureeing method: in this case and in contrast to potatoes, technology is a real help and demands all blenders on deck! How well a vegetable is blended has a direct influence on its texture.
• Passing through a fine sieve: removes fibers and improves the texture of the puree significantly.
• The use of liquid: Has the final say on the consistency and therefore, partly, the texture of the vegetable puree. Consistency is, of course, a matter of taste and the intended use of the puree. It is worth noting that in haute cuisine, the tendency over recent years is towards thinner purees which touch upon the boundaries of a sauce.
