When cooking using the braising method, it is best to use the oven.
Braising in the oven offers a steady and controllable temperature which is essential for the end result.
If you don’t have a pan which can be placed in the oven, you can use a small baking tray. Cover and place in the oven at 120-140°C.
You can, of course, cook on the hob if there is no other choice, regulating the temperature to the lowest possible level.
