For the chicken and finish
Bring a pot to high heat and sauté the minced meat very well.
Stir well to crumble the meat into small fragments.
Lower the heat, season with salt, add the onions and cook for about 5 minutes until soft.
Add the chili peppers, the garlic and the lemongrass and cook for another 1-2 minutes.
Pour in a little water if needed and add the remaining ingredients. Simmer for about 5 minutes.
Top the steamed rice with the meat, add the egg, sprinkle with fresh coriander and serve.
