For the dish
Place potatoes and 40 gr. olive oil in a baking dish and cover with foil. Bake at 150°C until soft. Allow to cool and cut in half. Place a frying pan over high heat, add remaining olive oil and add potatoes, cut-side down. Sauté until golden brown and add butter. Toss until the butter begins to darken, then add herbs and garlic oil.
