INGREDIENTS

For the stock

  • 250 gr. onions, finely sliced
  • 250 gr. leeks, finely sliced
  • 200 gr. carrots, finely sliced
  • 150 gr. button mushrooms, finely sliced
  • 150 gr. fennel, finely sliced
  • 100 gr. celery, finely sliced
  • 3 kg. cold water
  • thyme
  • bay leaves

DIRECTIONS

For the stock

Place all the ingredients into a appropriate size stockpot. Bring to a simmer, skimming as necessary. Simmer until balanced fresh vegetable flavor is attained, 45 minutes to 1 hour. Strain and cool to room temperature. Store in the refrigerator until use.
